What I Eat at College + My Grocery List

Last week I shared four go-top recipe ideas in this blog post and a couple of food Insta stories, and I got a lot of questions about what I actually eat in a day. While I don't have a quick answer to that question (it changes everyday!), I will say I eat the same types of things daily because my grocery list is small and simple, and our apartment doesn't have the best storage to keep an overwhelming amount of food around. Plus, being just one person (and occasionally sharing groceries with my roomie) I don't want to buy too much food and risk it going bad. Below I'm sharing a few of my favorite things that I eat at school, along with a mini grocery list of foods I couldn't go without in my apartment!

Pictured above is one of my new favorite breakfasts: a waffle topped with greek yogurt, tons of cinnamon, and a drizzle of raw honey. I found this box of frozen waffles randomly at the grocery store and decided to try them out because they're packed with fiber and have fewer calories than a slice of bread! I just got the plain lite waffles (only 65 calories per waffle!) but I really want to try the chocolate chip, what a surprise :)

I rarely used to eat bread at home, but at school it's just such an easy option to make toast. I have a few different kinds of jam in my fridge which I love on toast, and before I got those waffles above I would do some sort of combo on top of whole grain toast. Picture above is almond butter, cinnamon, sea salt, and blueberries!

On days when I want to do a savory breakfast instead of sweet, I love to make scrambled eggs and put them on a tortilla with black beans and salsa.

Lunch and dinner are always random... for lunch I love having celery and peanut or almond butter. It's so addicting!! Some days I always do veggies (carrots, bell pepper, cucumbers...) with hummus and crackers. Or, I'll do nut butter and jam on crackers. Pretty simple!

This is kind of a gross looking picture, but I took it halfway through eating my lunch yesterday for the sake of this post. I made a Trader Joe's turkey burger and put it in a salad with baby spinach/arugula mix and a garlic/herb salad dressing my roomie and I found at the grocery store. Unlike most high-fat dressings, we found an option that was lower calorie because it's made with vinegars instead of oils.

For dinner I like doing protein and veggies... we will roast things like Brussels sprouts, cauliflower, sweet potatoes, or whatever we have, and make a chicken sausage, salmon, turkey burger, etc. maybe in a salad or with quinoa or black beans! We honestly just make ourselves whatever we are in the mood for. We have done quinoa pasta with roasted tomatoes, mozzarella, and basil, and we do avocado toast with a fried egg a lot. So yummy!

We don't really have any desserts at our apartment, but one of our roommates has a pear tree at home and brought a ton of pears here, so I love baking a pear with cinnamon, honey, and walnuts! My best friend/roomie and I can't live without dessert, so we have a favorite candy shop dangerously close where we go for chocolate covered nuts or other candy, and there is a cute gelato place and a coffee shop with delicious bakery items where we sometimes stop for dessert!

Almost every night I will make myself a cup of tea before bed. My all-time favorite tea is the Yogi brand Egyptian Licorice tea! Seriously... it's so good, and it'll cure a sweet tooth! I also love regular peppermint tea, too.

So, without further adieu, here's what I usually have at my apartment:

I explained a bunch of the products throughout the post, so this should be pretty self explanatory. I couldn't go a day without my sparkling water! We always have our drink fridge stocked with La Croix... favorite flavors include coconut, tangerine, passionfruit, and lime!

If any of you guys live in an apartment, at college or already in real life, what do you keep your kitchen stocked with?
xoxo

  1. LOVE this post Frannie!! I am addicted to Trader Joe's runs and their "cowboy caviar" salsa is seriously my go-to snack 24/7. Chips and salsa in general are so good, but I have been loving sweet potato chips to dip in it lately!!! A fun (and healthy) switch up!

    Happy Friday-Eve!
